World's Best Lasagna

In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.

Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.

Preheat oven to 375 degrees F (190 degrees C).

To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.

Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

Directions

Cook lasagna noodles as directed on package drain and place on cold water to cool.

Meanwhile, in 4-quart saucepan or Dutch oven, cook ground beef, sausage and onions over medium-high heat 5 to 7 minutes, stirring frequently, until beef and sausage are thoroughly cooked drain.

Stir in tomatoes, tomato paste, basil, sugar, oregano, salt and garlic powder. Bring to a boil. Reduce heat to low simmer 30 to 45 minutes stirring occasionally, until very thick.

In medium bowl, beat eggs. Stir in ricotta, cottage and Parmesan cheeses and parsley set aside.

Heat oven to 350 degrees F. In ungreased 13- x 9-inch (3 quart) glass baking dish, spread about 1/2 cup beef mixture. Drain noodles.

Top beef mixture with 3 noodles, half of the cheese mixture, half of the remaining beef mixture and half of the mozzarella cheese. Repeat layers, starting with noodles and ending with mozzarella cheese.

Bake 35 to 45 minutes or until lasagna is bubbly and top is golden brown. Cover with foil let stand 10 to 15 minutes before serving.

Preparation

Preheat oven to 350 F. Grease a large glass or ceramic 11- by 17-inch baking dish with about 1/2 tablespoon of olive oil.

In a medium saucepan over medium-low heat, heat 1 tablespoon of olive oil. Add the diced onion and a large pinch of salt. Sauté until the onion is translucent, about 3 minutes.

Add the minced garlic and combine with onion.

Add sausage, breaking up larger clumps of meat so all is evenly browned.

When sausage begins to brown, add red pepper flakes and stir to combine.

When sausage mixture is browned (watch carefully to ensure it does not burn), remove from heat, drain off oil and set aside in medium bowl.

Boil roughly 5 quarts of water with 1 tablespoon of salt. When water boils, add noodles. Let come to boil again, and remove noodles when still somewhat al dente. Set aside.

Pour a thin layer of sauce to cover the bottom of the pan and roughly a 1/2-inch up the sides. This will keep your lasagna from sticking.

Place a layer of lasagna sheets side by side and line the bottom of the pan.

Spoon on a thin layer of sauce.

Top with the "playing card" rectangular slices of spinach pie. Cover the sheets end to end.

Spoon a thin layer of sausage mixture atop spinach mixture.

Sprinkle on a thin layer of shredded mozzarella.

Top with a second layer of lasagna sheets.

Repeat steps 10-13 until just about even with edge of pan do not overfill.

Top the topmost layer with all the remaining cheese.

Cover loosely with aluminum foil and bake for 1 hour. If you uncover for the last 15 minutes, the lasagna will be a beautiful golden-brown.

What Kind of Cheese to Use in Lasagna?

There are so many types of cheese in this rich, delicious dish! For this recipe, I like to slice fresh mozzarella into thin strips (it seems to melt easier that way) and several handfuls of tangy Parmesan cheese. This recipe calls for cottage cheese, which is easy to find and gives the lasagna more bulk and flavor. But you could swap that out for creamy Ricotta cheese too.

Grilled Lasagna recipe from Chef Jeff at Smith's

If you love grilling outside, but also love Italian comfort food, here's a recipe for you.

Smith`s Chef Jeff Jackson joined us from his kitchen with a recipe for Grilled Lasagna.

12 oven-ready lasagna noodles

1 lb. ground Italian sausage or beef

24 oz. favorite jarred marinara sauce

1 c. parmesan cheese, divided

Preheat your grill to medium heat. In a large skillet over med-high heat, add a little salt and pepper and brown and the meat. Add the onion, red bell pepper, garlic and Italian seasoning. Cook for an additional 5 minutes or until the onions are softened. Drain the excess fat and then stir in the marinara sauce. Simmer 5-10 minutes. Set aside

In a small bowl, mix the ricotta and egg until smooth. In another bowl, combine the mozzarella with ½ c. of the parmesan and the olive oil. Run each noodle under a little running water and place on a plate. Lay out 4 sheets of the heavy duty aluminum foil, about 16x16 square, and spray each with non-stick spray.

Place one noodle on each sheet and then top each with about ¼ c. of the marinara.

Next put about 3 tsp. of the ricotta mixture and spread evenly.

Sprinkle each with about half of the mozzarella cheese mixture.

Repeat the process with another noodle, sauce, ricotta then mozzarella. Top that with the remaining noodles. Cover each with what`s left of the marinara sauce, and then sprinkle the last ½ c. of parmesan on the top.

Fold over the aluminum foil to make a pouch making sure to crimp the edges.
