Tiramisu with fruit recipe
We wash the strawberries, we break their tails, we cut them in two and we drain them in a sieve. From 200gr strawberries we make a juice that we mix with a spoon of sugar and we put water up to 300ml.
Separate the yolks from the whites.
Rub the yolks with 120 g of sugar or sweetener until they turn white. Put the mascarpone cream and mix well.
Mix the egg whites with a pinch of salt, add 60g of sugar or sweetener and beat until hardened, then incorporate them into the above composition, mixing well. Add the strawberries and mix gently.
In a round cake shape of 20cm, with detachable bottom, we put a layer of biscuits quickly passed through the strawberry juice, over which we pour a layer of cream, then we continue the same until we finish the cream and biscuits. Let it cool for a few hours, before we lower the edges of the shape. Decorate with strawberries.
